Description
The linden or lime tree is seen commonly across the UK and is particularly prevalent in the village of Madeley Staffordshire.
It provides us with abundant uses – the leaves are edible when young, the blossoms make a wonderful tea, and the roasted, ground seeds taste like mocha! Not only is it edible, but it also has medicinal properties.
During this workshop you will learn all about this fascinating tree, how to recognise the three varieties, when and how to harvest useful parts, and how to process them once you have picked them.
We’ll head out to pick the seeds and learn how to process them into a coffee substitute, a chocolate paste, and learn recipes to use it to make wonderful desserts. You’ll get to try the finished product as well as taste tea made from the blossoms that flowered earlier in the year.
The session is limited to six people and takes place outdoors and indoors. It is suitable for people with limited mobility, the walking element is short and on good surfaces, but we will be standing to harvest for at least an hour. The indoor element will be seated.
